After fermentation, each bottle rests in the cellar for a carefully orchestrated maturation process, developing unique aromas. This process lasts at least three years, and up to six years for our precious vintages. Regular tastings ensure the optimal expression of our champagnes.

The sediment naturally forms inside the bottle during the second fermentation. Using a disgorging machine, this deposit is expelled by the pressure created during fermentation, as the yeasts consume the sugars, revealing a champagne of exceptional purity. This technique is especially valued for its precision, as it minimizes wine loss during the process.
